If you're like me, holidays are frantic.
And complicated recipes that require a lot of measuring and time add to the holiday stress.
I like flexible ingredients that can be altered to taste, are fast and easy for holidays.
Recipes that taste good with little fuss.
> 1 Whole Eggs or 2 Egg Whites if using prunes -- 2 Egges or 1 Egg Whit if using sugar
> 1/2 C Sugar OR 1/4 C Sugar, 1/4 C Splenda OR 20 Pruned with 10T water pulverized in blender
> Vanilla
> Salt
> 1t Baking Powder
> Chopped Walnuts (Optional)
> 3/4 C Flour
> 1/4 C Cocoa
Mix wet ingredients together.
Mix dry ingredients together.
Mix everything together.
Bake at 350 til done.
Who doesn't like a holiday recipe that involved chocolate and nuts? Isn't that what the holidays are all about, good food shared with family and friends. And the nuts and prunes are the "good-for-you" parts.
I make mine in my toaster oven in 2 batchess to keep from heating up the kitchen. They seem to cook faster because you're not heating up a large oven inside. I also reduce the teimperature.
If you are using the 1/2 C sugar, you may want them sweeter. They come out "cakier" with the sugar version.
