If you're like me, holidays are frantic.
And complicated recipes that require a lot of measuring and time add to the holiday stress.
I like flexible ingredients that can be altered to taste, are fast and easy for holidays.
Recipes that taste good with little fuss.
> 2 Whole Eggs or 4 Egg Whites
> 3/4 C Sugar or 1/2 Sugar, 1/2 Splenda
> Vanilla
> Cinnamon
> Nutmeg
> Salt
> 1t Baking Powder
> 1t Baking Soda
> 3/4 C Apple Sauce
> 1-1/2 C Carrots (about 2 medium)
> 1/4 C Walnuts (Optional)
> 1-1/4 C Flour
Mix wet ingredients together.
Mix dry ingredients together.
Mix everything together.
Bake at 350 til done.
Icing for Cup Cakes:
4 oz. Cream Cheese
Milk
Lemon Juice and Zest
Powdered Sugar or Splenda
Mix to the consistency
I usually make the cup cakes and use the Splenda/Sugar mixture to try and keep the calories down. But we really enjoy them and cup cakes are already "Portion Controlled"! You can spread the recipe out to make more cup cakes and make them smaller for the holidays when everyone has already over-indulged. They are healthy too!
