> Zest 1 lemon into a bowl and add the juice of that lemon.
> Cut up 2 avocados, put into lemon juice and stir
> Cut up 2 tomatoes, put into a separate bowl and lightly salt to get the water out of them.
> Cut up some red onion, soak in cold water to reduce the bite.
> Non-fat yogurt for sauce, garlic salt & pepper, and your favorite chopped herb (cilantro or basil are especially good)
> Drain tomatoes and combine everything with some thawed, cleaned shrimp.
Options:
> Add corn sauted in butter and cooled
> Add cubed cheese or hard boiled eggs
